Chicken & Mushroom Stroganoff

    Chicken & Mushroom Stroganoff

    Olive Oil
    1 lb boneless, skinless chicken tenders or breasts
    12 oz fresh mushrooms sliced
    1 cup finely chopped onion
    1/2 C lite sour cream
    1/4 C chicken broth
    2 TBS of fresh chopped dill or 2 tsp dried
    1 tsp salt
    1/4 tsp pepper

    Add some olive oil to a large skillet and cook the chicken over medium heat until golden and cooked through.
    Remove chicken and cover to keep warm.
    Add more oil if necessary and saute the mushrooms and onions until tender.
    Reduce heat to low and stir in the sour cream, broth, dill salt & pepper.
    Return chicken to the pan and for about 5 mins.
