Lasagna Roll-Ups

    My family loves lasagna and these roll-ups use the same ingredients, but are easier to serve.

    1 pkg of lasagna noodles
    Your favorite tomato sauce
    32 oz Lite Ricotta cheese
    2 eggs
    1TBS parsley
    salt & pepper
    2 C shredded Italian cheese (mix of mozzarella, parmesan, etc)
    1 pkg of chopped frozen spinach, thawed

    Cook the lasagna noodles according to package directions, then rinse with cold water. Mix together the ricotta, eggs and seasonings. Squeeze excess water from the spinach. In a large casserole dish, place a few TBS of sauce to cover the bottom of the dish. On your workspace, lay out 3 or 4 noodles flat, and close together. Spread each with a spoonful of the ricotta. Sprinkle with a light layer of spinach, followed by the shredded cheese. Roll the noodle up and place "end side" down in the casserole dish. Continue until all noodles are rolled. Cover with another layer of sauce and sprinkle remaining shredded cheese on top. Bake in a 350 degree oven until bubbly. (approx 30 mins or so)

    These are great also great for smaller quantity cooking. You don't have to make the entire box of noodles. Cook a few if that's all you need and adjust the other ingredients. OR make the box, but freeze leftovers separately.

    I just love pasta. However, no way can I make lasangna successful, I always seem to dry it up somewhere. Any hints?

    Um, that's a puma (cougar, mountain lion, panther) along with the desert tortoise in charge of keeping me in line.

    I cover the dish with aluminum foil so the edges of the pasta don't dry out. Some casserole dishes have lids. (My lasagna pan doesn't)

    I use cottage cheese instead of ricotta... it is a bit wetter, and my family likes the taste better. Dont know if you have that over there though... the only other word I found when doing a google was smearcase...lol

    Smearcase is what the Pennsylvania Dutch call cottage cheese. my mother was never able to break my father from using the term. She thought is sounded nasty and shouldn't be used in polite society. (lol)
