Egg Drop Soup

    Egg Drop Soup


    Ginger-infused egg drop soup offers a warming throat-soother for kids with colds.
    Ingredients
    4 cups reduced-sodium, fat-free chicken broth
    1-inch piece peeled ginger
    2 large eggs
    2 teaspoons sesame oil
    1 tablespoon soy sauce
    Instructions
    Place the broth and ginger in a saucepan and bring to a boil over high heat. While the broth is heating, blend the eggs together with a fork in a small bowl. Remove the boiling broth from the heat, and stir with a wooden spoon to swirl the liquid. Slowly pour the egg mixture into the swirling liquid (the eggs will cook instantaneously). Add the sesame oil and soy sauce, stir to combine, and ladle the soup into bowls, discarding the ginger. Serve hot.
    (Makes 2 to 4 servings)

    It is Asian soup... sometimes it has shredded chicken and veggies. It has a tang to it, which is nice when you are sick. I like to put soy sauce in to balance some salty in with the tangy. We get it at almost every Chinese food place in town, but don't know how common it is where you are. The eggs get sorta stringy, kinda like a thin noodle. Hope that helps hehe

    If you are in a trying mood... hot and sour soup is good too! That is what I like when I am sick, but it is not kid/pregger's friendly lol. I tried it when pregnant with Cam and had the WORST heartburn.
