Gluten Free Banana Cake

    For this simple free from almost everything cake you need:

    1 cup of rice flour
    1/2 cup of olive oil
    1/2 cup of dark brown sugar
    4 Bananas (on the old and moldy side of ripe)
    2 eggs
    2 tsp of Baking Powder
    1 tsp of Baking Soda
    1 tsp of Vanilla Extract
    1 tsp of Ground Cinamon

    In a bowl mix the Olive Oil, Vanilla Extract, Eggs and Sugar until the sugar disolves into the oil
    Sift in the Flour, Baking Soda, Baking Powder and Ground Cinamon
    Mix well to create a batter.
    Crush the bananas and add to the mix.
    Pour into a pre-greased load tin.
    Put in the oven at 170 for 40 minutes.
    Take out of the oven, and let rest for 10 minutes inside the loaf tin
    Turn out onto a wire rack and allow to cool completely then eat it.
